If the store is out of Puff pastry but you really planned on it this week, don’t worry, here is my easy recipe for a homemade puff pastry that is so easy and will work great for every puff pastry recipe.
INGREDIENTS
4 cups + 1/4 cup flour (500 gram)
2 Tbsp. white vinegar
1 1/4 cup water
1/4 cup vegetable oil
1 1/2 sticks of unsalted butter (400 grams)
TO MAKE
Place all ingredients except the butter in a mixer and knead for 8-10 minutes, cover with clear plastic refrigerate for one hour.
Use rolling pin to open the dough to about 1/8” thick. Slice all the butter sticks and cover most of the dough with butter. Fold in the sides of the dough of both sides.
Fold in all four side of the dough.
Use the rolling pin to flat the dough to double its size.
Fold again to two and roll out to double the size of the dough.
Fold the third time, this time to Third of the dough size and roll again to open.
Use the rolling pin for the sixth time, and again use the rolling pin and fold the dough to 3 folds.
Wrap the puff pastry dough with clear plastic and freeze untill use, unless if you are planing to use it that same day, then only refrigerate for 4 hours then useit.
You can cut the puff pastry to two parts if you only need a half of it.
As always, with love, from my kitchen to yours
