Mid-Week Apple Cake is also a Great Rosh Hashanah Dessert

INGREDIENTS

1 cup of brown sugar

1 cup vegetable oil

2 tsp. vanilla extract

1 tsp. cinnamon

2 large eggs

1 + 3/4 cup flour

1 Tbsp. baking powder

1/4 tsp. baking soda

4 large apples cubed small.

4 oz. chocolate chips (optional).

4 oz. chopped nuts, (optional)

  • TO MAKE

Peel off apples, cube to small squares, sprinkle a few lemon juice drops and mix apples to avoid discoloration.

Mix eggs, oil, vanilla extract, sugar, mix well, add baking powder, baking soda,

Add cinnamon, salt, mix well. add flour mix well.

Mix well to a smooth batter, avoid lumps.

Add nuts if using, gently fold in.

Transfer chopped apples, gently fold in.

Spray or oil a baking pan.

Transfer batter to a baking pan.

Bake at 340F (175C) for about 50 minutes.
