Malabi, Shavuot Flourless Dairy/Non-Dairy

INGREDIENTS

For the Malabi layer-

3 Tbsp. cornstarch

2 cans of coconut milk (not cream)

1/3 cup sugar

1 Tbsp. rose water (can be ordered on my amazon shop- https://amazon.com/shop/sephardicflavors)

Unflavored gelatin is optional.

For the strawberries topping-

1 tsp. rose water.

1/3 cup sugar

1/4 cup pilled pistachio

3 cups fresh strawberries

  • TO MAKE

Add water, corn flour, mix well to a smooth mixture. Set aside.

Place 2 cans of coconut milk, cook on medium, add sugar, mix while cooking. Add the corn flour mixture, mix constantly to avoid lumps. it only takes 2-3 minutes. now add rose water, mix well, remove from heat.

Transfer to a glass dish and cool completely, you can make this one day ahead.

Chut each strawberry to 4 parts.

Place strawberries in a pot, add other ingredients and cook for 5-7 minutes to soften.

Cool completely.

Chop the pistachio.

To serve, place Three scoops of Malabi in a serving dish

Add strawberries

Sprinkle pistachios on top and serve, enjoy and share with Family and friends.
