Fall in Love with this Apple Torte, great for Rosh Hashanah

INGREDIENTS
First layer- dough-
1 stick of unsalted butter minus 1 Tbsp.
1 Egg yolk
1+1/2 cup flour
1/2 cup sugar
1 tsp. vanilla extract
pinch of salt
Second layer- apples-
5 apples, 2 lb.
1 tsp. cinnamon
1 Tbsp. lemon zest
1/4 cup sugar
Third layer-top the apple
3 eggs whites
3 egg yolks
1/2 cup sugar
1/2 cup flour
TO MAKE
Peel of the apples, shred the apples, transfer them to a bowl with a few drops of lemon, refrigerate while working on the dough.
Place all dough ingredients in the mixer and mix for a few minutes to create crumbs.
Place crumbs in a baking pan.
When the dough is baked, top it with the shredded apples. in a small bowl mix the cinnamon with the sugar & lemon zest, sprinkle on the apples.
In a mixer add the egg whites & sugar to a stiff cream, fold in the flour
