Celeriac Root & Lemon Dip/Spread

INGREDIENTS 

1 cup of chef Yaffa lemon spread recipe (see recipe in dips & spreads)

1 large celeriac root (celery root)

1/4 cup lemon juice

1/4 cup olive oil

1/2 tsp. salt & black pepper

How to make

Peel off the skin, cut out the hard parts, cut the root to small cubes & rinse.

Transfer the celeriac root to a food processor.

Process for about 4-6 minutes to get a smooth texture, add all other ingredients, mix well.

Enjoy this dip with wedges of carrots, celery or cucumbers.
