Baked Avocado Eggrolls

INGREDIENTS 

1 Avocado

2 green onions, thinly chopped.

1 carrot, shredded.

1 tsp. ginger, minced.

1/2 tsp. salt and pepper

1 pack of tortilla, 7” round

1 tsp. lemon zest

1/4 cup fresh cilantro, chopped.

1/4 cup lemon juice

How to make

Add all ingredients to a large bowl.

Mash all avocados to a paste, mix all ingredients well.

Brush one tortilla with very little olive oil, add one scoop of filling, fold in the two sides then roll it like an eggroll.

Place on a lined up baking sheet, repeat untill all filling is done.

Optional- brush each eggroll with egg, bake at 400F (200C) until golden brown.

Serve warm, crispy with a fresh salad.
