INGREDIENTS
1 lb. frozen spinach, thawed.
2 medium potatoes, cooked.
1 egg.
1/2 cup parsley, chopped.
1 cup ricotta or Mexican cheese.
3 garlic cloves
1/2 tsp. salt
1/2 tsp. white pepper.

How to make
Spinach should be in room temperature, squeeze as much water as you can, transfer to a dry bowl.
Add shredded potato, cheese and other ingredients to the spinach bowl.
Mix well, refrigerate for 30 minutes.
scoop out 1/4 cup of the filling and form as a patty, place on a baking sheet.
The spinach patties can be fried or baked; this batch was baked at 375F for 30 minutes.
Serve warm, crispy with a fresh salad.
