Avocado Garlic Dip

INGREDIENTS
3 sweet potatoes
3 Tbsp. olive oil
1 tsp. salt
1/4 tsp. black pepper
For the Avocado dip-:
1 Avocado
1/2 cup Mayonnaise (I used 2 Tbsp. olive oil instead)
1/2 tsp. salt
1/2 tsp. garlic powder
1 Tbsp. lemon juice

How to make
Peel off potato skin and slice.
Slice the potato and place in a bowl with the olive oil, salt & pepper.
Mix well and arrange on a baking plate, bake for 25 minutes at 350F (180C)
Set aside & cool completely.
Slice to open the Avocado, remove seed.
Mash Avocado to a dip texture.
Mix in all other ingredients.
Wrap in clear plastic & refrigerate for 30 minutes before serving.
Serve with wedges of sweet potatoes, enjoy and share with family and friends.
