Borekas spinach & cheese is a great crispy Appetizer recipe

INGREDIENTS 

  • 1 package puff pastry (I use Pepperidge farm, Parve)

  • 2 onions

  • 1 bag of frozen spinach

  • 1 lb. mixed cheese- Mozzarella, Feta, cottage cheese or Labane)

  • 1 Egg for brushing

  • 2 Tbsp. sesame seeds

  • 1/2 tsp each salt & pepper

How to make

 In a shalow pan add 2 Tbsp. olive oil and the frozen spinach, cook while constantly mixing , about 7-10 minutes, make sure most liquids have evaporated.

Remove spinach from the pan, set aside to cool down

Add onions to the same pan , add 1-2 Tbsp. olive oil and cook to brown a little

Remove onions from the pan & set aside to cool down.


Transfer all cheese to a large bowl, add salt and pepper, mix to blend

Open the Puff pastry package and set aside one part (It comes with 2 sheets of dough)

Use a rolling pin to strech the dough sheet to enlarge the size

Check to see if the spinach still has liquids, if so use your hands or a collander to squeeze the spinach from extra liquids, now mix spinach and cooked onions and lay on the narrow side of the dough, in a log shape as it shows here in the picture

  Add cheese on top of the layered spinach , now start folding the two sides of the dough to avoid leaking

Now that the two sides are secured start rolling the dough into a log shape, and brush with a mixed egg.

Spread sesame seeds on top of the log, It’s optional but adds a lot


Place the Borekas in a pre heated oven and bake at 375F (190C) for about 30 minutes or until dough is golden brown and crispy.

And here is a great tip- You can make an Asparagus Borekas to surprise guests with the most delicious and unique Borekas, here is how you do it:

Boil water and cook asparagus in hot boiling water 5 minutes, not more!

Let Asparagus cool down and wrap in a puff pastry dough, brush with egg, sprinkle sesame on top & bake like the Spinach Borekas. Enjoy and share this recipe to your community.
