Sephardic Chicken Soup So Heart Warming

INGREDIENTS

1 large onion, chopped.

1 tomato, shredded.

1 chicken, whole.

1/2 cup of fresh parsley, chopped.

1/4-1/2 cup fresh dill, chopped.

2 zucchini.

1 celery root (celeriac), cubed.

1 Tbsp. chicken powder.

1 Parsley root, cubed

1 parsnip root, cubed

1 cup celery leaves.

1/2-1 tsp. salt

3 carrots. cubed

12 cups water.

TO MAKE

Chop onions small and transfer to a pot with the oil, brown onions to get a Golden color.

Place in a soup pot and add 2 Tbsp. vegetables oil, cook on meduim heat.

Chopp all herbs, add to the cooking onions.

Cube all vegetables and add to the pot.

Remove the strings from the celery , cube and add to the pot.


Add the chicken to the pot.


Add the water and spices, bring to a boil.

Reduce the heat, cover & simmer for 1-11/2 hours.

Serve the soup hot with a crispy bread .
