INGREDIENTS

2 large eggplants
3 Tbsp. vegetable oil
3 large onions, chopped.
5 eggs, hard boiled
1/2 tsp. black pepper
1/2-3/4 tsp. salt
1 cup walnuts
2-3 Tbsp. vegetables oil.
TO MAKE
Place eggplants in a baking pan, add salt & pepper and oil, toss together, bake at 400F uncovered 30 minutes until they are cooked.
Boil the eggs, transfer onions to a pan with oil, cook to brown.
When the eggplants are ready, transfer them to a food processor, add all other ingredients, let the food processor work until you see a smooth paste forming.
Turn on the food processor for about 6-8 minutes
Transfer to a serving plate or a container.
