Potato Pie for Every Meal

INGREDIENTS

6 large Potatoes

3 eggs

3/4 cup olive oil

1/2 tsp. salt & pepper

1/2 cup cheese of your choice, I used goat cheese & feta cheese

1 large onion

1 Tbsp. dry dill.

TO MAKE

Peel of potatoes, cut to long wedges.

cut onion to quarters

Shred potatoes and onions

shred all cheese, add to a bowl with potatoes.

Add all other ingredients, mix well, set aside.

Brush baking dish with vegetable oil.

Place baking dish in a pre-heated oven for 10 minutes to warm it.

Bake at 400F (200C), bake for 20-25 minutes to a golden brown.
