Moroccan Couscous a Celebrated Tradition

INGREDIENTS

For the couscous soup-:

3 carrots.

3 potatoes.

1 large onion, chopped.

1-2 zucchini.

4 celery sticks.

2 soft tomatoes.

1 celeriac root.

2 cups cold water+1 Tbsp. chicken powder, mixed.

1Tbsp. olive oil.

1 sweet potato.

1 1/2 cups garbanzo beans, cooked.

1/4-1/2 pumpkin

1/2 tsp. turmeric

2lb. chicken cut to pieces.

1 tsp. salt.

1/4-1/2 tsp. pepper

For the couscous-;

1-1 1/2lb. semolina.

2 Tbsp. olive oil.

2 cups water

TO MAKE

Add chopped onion and oil to a soup pot, cook to brown.

Peel of all vegetables, cube to small pieces.

Shred tomatoes in a bowl while the onions are cooking.

Transfer tomatoes to the soup pot, mix it in, cook for 5 minutes, covered.

Add the chicken, mix, cover, cook 10 minutes.

Add all couscous ingredients, mix , cover & bring to a boil.

Reduce, cover, & simmer for 20 minutes.

Add cooked garbanzo beans.

Add all vegetables.

Add water with Chicken powder, and add water to top the vegetables.

Bring to a boil, cover & cook on low for 2 hours.
