Pastia, Bestilla, Moroccan Delicacey

INGREDIENTS

This recipe yields 2 Pastias

1 packet of phyllo dough

Bowl #1-:

3 Tbsp. vegetable oil

2-3 large onions, chopped small

Bowl #2-:

3 Tbsp. vegetable oil

4-5 eggs

1/4 tsp. saffron threads soaked in 1/2 cup water for 10 minutes.

1/4 tsp. each salt & black pepper

Bowl #3-:

1 lb. ground beef or chicken

2 Tbsp. vegeteble oil

1/2 tsp. each- salt, black pepper, ginger, cumin, sweet paprika, turmeric, cinnamon

3 Tbsp. each fresh cilantro & parsley

1/4 cup almonds, chopped mixed with 1/4 tsp cinnamon, 1 tsp. sugar

TO MAKE

Place 3 bowls on the table

Chop the onions, cook to brown

Onions should be caramelized color, set aside.

Cook the eggs for 1 minute while mixing, pour over the saffron water, mix constantly while cooking for the eggs to absorb the saffron flavor until there is no liquid, set aside.

The saffron eggs should look like this, set aside.

Chop the almonds and place in a pan with 1 Tbsp. vegetable oil, sprinkle with the sugar & cinnamon ,cook for 3-4 minutes while stiring constantly, set aside.

For the meat bowl, place all ingredients in apan & cook while stiring constantly to blend the meat with the spices, cook to brown about 5-7 minutes, set aside.

When all 3 bowls are ready and the almonds are cooked you can start the assembling of the Pastia.

Take out one phyllo dough and brush with some vegetable oil, transfer to a baking dish and line up all around the base and the sides of the baking dish, repeat with 3 more phyllo dough layer as shown in the picture below.

Transfer the cooked saffron eggs to the baking pan as the first layer.

Top the eggs layer with the cooked onions layer

Place the meat mixture on the cooked onions, sprinkle the almonds on top of the meat.

brush another phyllo dough with oil

Fold inthe extra phyllo dough and cover with the phyllo dough you just brushed

Tuck in the sides of the last phyllo dough to cover all the top of the layers.

Bake at 350F (180C) until it is golden brown.

Cool down for 15 minutes before removing the ring

Sprinkle powdered sugar and some cinnamon befor serving.
