Hamantaschen Cookies Purim recipe

INGREDIENTS

  • 2.2 lb. flour

  • 1/2-2/3 cup vegetable oil

  • 2 Tbsp. baking powder

  • 1 cup orange juice

  • 1 tsp. vanilla extract

  • 2 sticks unsalted butter (dairy or plant base)

  • Juice of half lemon

  • for filling- jelly, jam, chocolate chips, date spread,

TO Make

  • Place all ingredients in a mixer bowl and mix on number 1 speed for at least 10 minutes.

    Dough will be a little sticky but that is good.

  • Take 1/3 of the batch and cover the rest of the dough, sprinkle a little flour on your working area.

  • use a rolling pin and roll the dough to open to a flat surface, about 1/4” thickness.

  • Use a cup or a round shape object to mark circles on the dough.

  • Fill in each circle 1 tsp. of the filling of your choice.

  • pinch together two sides of the dough, see the picture attached, to make a triangle.

  • Brush each Hamantaschen with egg and transfer to the oven

  • Bake at a preheated oven for 35 minutes, or until just golden.

  • Let Hamantaschen cool completely, then sprinkle with powdered sugar.

  • Hamantaschen can be stored in an airtight box and can be stored in the freezer as well.
