Chocolate or Cinnamon? It’s Bobka

INGREDIENTS
For Bobka dough
4 - 41/2 Cups flour
1 Tbsp. dry yeast
4 eggs
1/2 tsp. salt
2 sticks unsalted butter
1/3 cup sugar
Filling for Bobka-
1 cup cinnamon or 1 cup cocoa powder.
1 cup sugar
2 sticks unsalted butter
For syrup-
1 cup sugar
1/2 cup sugar
1 tsp. orange water blossom
TO MAKE
Start by making the filling, place all the filling ingredients in a mixer, mix well, refrigerate for 4 hours or freeze for one hour.
Make the syrup next, add all ingredients in a small pot, bring to a boil, simmer for 10 minutes, set aside.
Make the dough, add all ingredients to a mixer, mix for 8-10 minutes, wrap in clear plastic, refrigerate for 4 hours or overnight.
Divide the dough to 4 parts, refrigerate 3 parts while you work with one part.
Use a rolling pin to open the dough, add filling in the center as it shows in the picture, then fold inside both sides.
Use a rolling pin to flatten the dough, fold four more times and use the rolling pin to create a shape of a rectangle layers.
Use a sharp knife to slice three long pieces.
Make a simple braid, pinch the two ends to glue them together.
Fold in the two ends to show only the pretty braid and the lines of filling.
Brush the Bobka with egg brush and bake at 400F for one hour.
Brush the baked Bobka with the syrup while it is warm.
