How to make Epic Moroccan Eggplant Jam, a classic Mimuna dessert

How to make Moroccan Eggplant Jam recipe, This Eggplant Jam treat is everything- it’s a jam, pie flavor, cake filling, roulade & cookies flavor.

It’s an old-world authentic recipe that my mom used to flavor so many of her dishes with.

INGREDIENTS

  • tsp. ground cinnamon

  • 1 tsp. ground cloves

  • 1 tsp. ground ginger

  • 2 small cinnamon sticks

  • 2.2 lb. sugar

  • 2 lemons

  • 2.2lb. (1 kilo) small eggplants, also called Indian eggplants)

    TO MAKE

Use a fork to poke the eggplant, poke each eggplant five times.

It is easier to place the eggplant on a cutting board for the poking.

Fiil up a pot with water, add the eggplants, bring to a boil.

Cover the pot, cook 10 minutes

Discard the water, repeat one more time.

Add first the eggplants to the pot, then add sugar and all spices.

Cover and simmer for one hour

Cover and simmer for one more hour.

Squeeze two lemons

For the last cooking uncover the pot, cook to thicken the sauce.
