Blintzes of Mushrooms, onions are Gluten & Dairy Free

INGREDIENTS 

Half of a large Potato, cooked & skin peeled off.

3 eggs

1/2 tsp. each salt and black pepper

1 large onion, chopped.

4 oz. can of mushrooms

Optional- 1 tsp. chia seeds.

2 Tbsp. vegetable oil

How to make

Add oil and onions to a pan, cook to brown.

Add mushrooms, cook another 3-4 minutes, add salt & black pepper, mix well.

In a food processor add eggs, potato and spices, mix to get a smooth batter

Place half of a ladle in a pan, cook on low until bubbles show, just like in the picture below.

When bubbles show flip to the other side, cook another 1-2 minutes.

Place one blintzes on a plate, add about 2 Tbsp. of the mushroom filling, roll like an egg roll.

let it sit for a few minutes to settle, then slice it diagonally.
