Split Peas with Sephardic Twist

INGREDIENTS 

  • 2 cups dry split pea

  • 4 celery sticks

  • 1 large onion

  • 1/2 tsp black pepper

  • 5 Tbsp. olive oil

  • 12 cups water

  • 1/2-1 tsp salt

  • 2 carots

  • 11/2 tsp. cumin

  • 1 Tbsp. chicken powder (plant base)

  • 2-3 Tbsp. cilantro

  • 2 Tbsp. parsley

How to make

Chop onion and cook with olivr oil for 5-6 minutes, set aside

Slice celery to small thin slices , add to chopped onions

Peel carrots, slice to thin slices and add to the pot

chopp Cilantro and parsley and add to the pot

Mix cumin, salt, pepper and chicken powder add to the pot

Add water and dry split pea and mix well

Cover , bring to a boil & cook for an hour and a half on low heat
