Celery Ginger Lemon Salad

INGREDIENTS 

1 large celery pack, rinsed, cut to 2” each.

2/3 cup parsley, chopped.

1/2 tsp. turmeric

2 Tbsp. lemon juice

1/2 tsp. white pepper

1 tsp. salt

1 tsp. ginger

2 Tbsp. olive oil

5 garlic cloves

How to make

Make a small slit in the celery stick, crack to open and pull out the strings.

Add all ingredients, cook for 5 minutes, covered.

Add water, gently mix, cover, bring to a boil, reduce, heat & simmer for 30 minutes.

If there is too much liquid, uncover & simmer for a few more minutes.

Serve warm or chilled as a salad or side dish.
