Flourless Chocolate Orange Cake, Great for Passover

INGREDIENTS

For the cake-:

1 large orange or 4-5 small mandarins

150ml. light olive oil

4 eggs, in room temperature

250 grams sugar

250 grams chocolate chip (dairy or dark)

4 cups of Almond meal

Syrup-:

160 grams sugar

3/4 cup orange juice

  • TO MAKE

Cut mandarins to quarters, choose a fruity olive oil or a very light kind.

Transfer mandarins and olive oil to food processor.

Grind mandarins and oil in a food processor until smooth texture.

Add to a mixer the eggs and sugar, mix on high speed until pale and creamy batter.

Melt the chocolate chip and add to mixer.

Measure 4 cups of almond meal, add to the mixer.

Melt the chocolate and add to the mixer, mix well.

Transfer to a lined up and oiled baking pan at bake at 330F(170C) for 1hour and 15 minutes.

Make the syrup- In a small pot place the sugar and orange juice, bring to a boil, reduce and simmer for 10 minutes.

When the cake is ready, let it cool for 15 minutes and pour over the orange syrup.

Chill before serving.
