Leek & Potato Patties for Shavuot

INGREDIENTS

😊All ingredients are Kosher and can be purchased on my Amazon Kosher shop except perishables items: -

2 leeks, white part only- cubed

2 medium potatoes- cubed

1 egg

1 large garlic clove

1/2 tsp. each salt & pepper

1/2 cup parsley

1/4 cup basil

1 Tbsp. dill

5 Tbsp. mixed olive oil& vegetable oil

1/2 cup breadcrumbs or corn flour

1/2- 3/4 cup feta cheese

TO MAKE

Separate white part from the white & cube

Add leek cubes & all other ingredients to food processor.

Pulse several times to get chopped consistency of all ingredients.

Transfer to a bowl, refrigerate for 20 minutes

Add oil to a wide pan, form small patties and fry for 2 minutes on each side.

Make sure to flip only when patties are brown otherwise they will turn to crumbs.

cool completely before refrigeration, serve warm.
