Riefat Moroccan Tea Cookies recipe

INGREDIENTS

Yields 60-70 small cookies.

2.2lb. all-purpose flour.

1 cup vegetable oil

1 1/2 cup sugar

3 eggs + 1 for brushing

1 1/2 tsp. baking powder

1 Tbsp. Anis seeds

1 Tbsp. sesame seeds

1 1/2 cup orange juice

TO MAKE

Place all ingredients, except the egg for brush in a mixer bowl.

Mix on # 1 for about 7-8 minutes to get a clean smooth dough.

If dough is a little sticky don’t worry, sprinkle flour on work surface.

Cover and let dough rest for one hour.

Use a rolling pin to open and flat the dough to about a 1/4 “ thick

Use a cup for a circle shape or any shape of your choice, the authentic shape is really just a long log or an uneven shape that works for you. I chose the heart shape because I wanted to spread more love in this world, we could all use a little more love, right?

Brush the cookies with egg and transfer to the oven

Bake at 375 for about 25 minutes or until the Riefat are golden brown and the base of the cookie is gold color.
Let the cookies cool down completly before you are ready to store them in an airtight container.

These cookies are a great snack and can accompany tea or coffee, also great with hot chocolate on a cold winter day.
