Salmon Burger with root vegetables in French Sauce

INGREDIENTS

4 Salmon burgers or 4 Salmon fillets
2 Tbsp. butter or 3 Tbsp. olive oil
1 Tbsp. fresh thyme
2 leeks
1-2 carrots
2 small parsley roots
1 red bell pepper
4-6 celery sticks
4 garlic , chopped
1/2 tsp. salt
1/4 pepper
1 Tbsp. olive oil to brush the second pan
1/2 -1 cup dry white wine
1+1/2 cup heavy cream
1 tsp. fresh thyme to sprinkle
To make
Add butter or oil to a pab
add thyme
cook 1 minute
add garlic and all vegetable, cook 10 minutes covered
In a separate oven proof pan brush pan with oil, add salmon, bake in oven 12 minutes
Add wine & cream to vegetables, cook 12
Drizzle vegetables & sauce on Salmon
