INGREDIENTS

  • 1 lb. chicken thighs or chicken breast, thinly sliced

  •  1-2 egg , mixed

  • 1/2-1 tsp salt

  •  1 cup gluten free bread crumbs 

  • 1 cup gluten free flour

  • 1/8 tsp. black pepper 

  • 1 Tbsp. sesame seeds

  • Half lemon, sliced.

  • 1 Tbsp. flax meal (to help bind the crumbs)

  • vegetable oil spray.

Use a very sharp knife to slice thin slices from the chicken breast.

Deep the first slice of chicken in the egg.

Brush a parchment paper with olive oil.

In a second bowl mix bread gluten free crumbs, gluten free flour, salt & pepper, sesame seeds, flax seeds, mix well than coat chicken breast with the crumbs mixture & place on a lined up oiled baking pan.

Spray chicken with oil spray , bake at a preheated oven at 400F (200C) for about 10-12 minutes.

Serve the shnitzel warm & crispy with slice of lemon.
