INGREDIENTS
For the cake-:
4 eggs, separated.
1/2 cup sugar
1/3 cup + 1 Tbsp. vegetable oil
3 Tbsp. Cocoa powder
1+1/2 cup cups flour
1 tsp. baking powder
Syrup-:
1/2 cup sugar
1/2 cup warm water
1 tsp. instant coffee
1 tsp. Rum (optional)
Ganache-:
1 cup heavy whip cream
3 oz. chocolate chips
2 Tbsp. sugar (optional)
Chocolate topping -:
4 oz. coconut milk
1/2 cup chocolate chip
TO MAKE
Add egg yolks to a bowl with half cup sugar mix, add flour and mix well, add oil mix well, add baking powder and cocoa powder, mix well.
Add egg whites to a mixer mix for minutes now add half cup sugar, mix in high speed, whip to a stiff cream.
When the egg whites are ready, gradually fold in the chocolate batter.
Gently fold in to mix.
Brush a baking pan with oil & bake at 350F (180C) for 30 minutes.
Let cake cool completely, slice in half.
Make the syrup, cool completely, drizzle syrup all over the cake, on both halves.
Make the ganache, cook the cream on low heat, add the chocolate chip and sugar, cool down completely. transfer to a mixer, whip it on high speed to have a creamy consisted texture. refrigerate for one hour, spread on the bottom part of the cake, cover the cake with the top part.
Make the chocolate topping- In a small pot add coconut milk and chocolate chip to cook on low, just to melt the chocolate chips.
Cover the cake with the chocolate topping and coat the sides as well.
