Purim Hamantaschen cookies are easy and delicious

INGREDIENTS

For the dough-:

2 egg yolks

2 sticks of unsalted butter minus 2 Tbsp.

2 cups of all purpos flour

1 Tbsp. sugar

pinch of salt

1 tsp. vanilla extract

1 Tbsp. orange zest

1/2 tsp. baking powder

1 egg for brush

For the filling-:

Anything sweet such as- date spread, jelly, jams, Nutella, raisins, chocolate chips.

TO MAKE

Add all the dough ingredients to a mixer or to a food processor and mix for 4-5 minutes, you will get a very grainy dough with some crumbs but do not worry.

Flour a work surface, transfer dough to a work surface and knead the dough to become one whole batch. divide the dough to 2 parts.

Use a pin to roll open and create a circle.

Use a glass cup to mark circles on the dough

Make as many circle as possible from the dough

Dough thinness should be no more than 1/4”

I made one batch with chocolate chips.

And the other batch is filled with jam.

Pinch cookies in two sides first than add third side to create a traingle

Go over the pinch sides again to make sure they don’t open during the baking

Brush all Hamantaschen cookies with egg

Or bake until golden color, then let cookies cool completely.
