Sweet Cheese Pastry Cakelets

INGREDIENTS

For the dough-:

5 cups flour

1/2 cup sugar

1 Tbsp. dry yeast

2 eggs

1 egg yolk

1 tsp. vanilla extract

1 cup water

15 Tbsp. /200 grams soft unsalted butter

pinch of salt

For the sweet cheese filling-:

1 lb. cream cheese

1/2 cup sugar

1 tsp. vanilla extract

2 eggs

lemon zest from half lemon

3 Tbsp. corn starch

For brushing-:

1 egg yolk

1 Tbsp. milk

pinch of salt

  • TO MAKE

Mix all dough ingredients to get a soft but not sticky dough, cover & let rise for 1 -11/2 hour

While the dough is rising make the sweet cheese filling, mix all cheese ingredients.

Transfer sweet cheese to a small bowl

Divide the dough to 2 parts.

I made half of the amounts in this recipe.

Roll the dough to open to a size of 12”x12”

Add 2 Tbsp. to each square of dough

pinch togather the two oposit corners

Now pinch to glue together the other 2 oposit corners

This is how each cake sssshould look

Mix the brushing mixture ingredients and brush each cake

Bake at 350F (180C) for about 25-30 minutes.

Serve chilled.
