Chicken with Celery in Lemon Sauce

INGREDIENTS

1 lb. chicken cut to a few pieces (dark meat)

1 -11/2 lb. celery sticks

1 Tomato, chopped

1/4 tsp. turmeric

1/2 tsp. black pepper

1/2 preserved lemon (see my recipe for an easy preserved lemon in the preserves category)

Or fresh sliced lemon.

1/4 cup vegetable or olive oil

4 cups water

1/2 tsp salt (Wait to taste before adding the salt, the preserved lemon is very salty, you might not need the salt)

TO MAKE

Cut both ends of each celery stick, make a small slit in the middle and crack to cut the two pieces, pull out of the strings, as much as you can.

Check out to how many strings I was able to pull out from the celery.

Soak the celery sticks in water and 1 Tbsp. of lemon to wash it.

Slice the preserve lemon to thin slices (or the fresh lemon)

Place the celery in a wide pan.

Mix in a bowl the lemon slices, turmeric, oil, tomato & pepper.

Deep every piece of chicken in the oil mixture & place on teh celery.

Add the water, and bring to a boil.

Cover the pan, reduce the heat to simmer, cook for 45-60 minutes.

To thicken the sauce and, remove the cover & simmer another 10-15 minutes untill desire consistency.
