Stuffed Peppers with Meat/Rice Berber Style

INGREDIENTS

1 lb. ground beef

3 green bell pepper, cut to halves.

2 hot peppers (optional)

5 garlic cloves, chopped

1/2 bunch parsley, chopped

1/4 cup olive oil

1/4 tsp. turmeric

1 tsp. sweet paprika

1/2 tsp. each salt & pepper

1 tsp. Berber spice blend (see recipe in the spice blends category)

1 cup cooked rice.

2-3 tomatoes, chopped.

TO MAKE

Start by peeling off garlic, chopp small.

In a small bowl add all spices and chopped garlic, mix well, divide to two parts.

Add tomatoes to a wide pan, add one halfe of the spices, cover and cook on meduim heat.

Add the second half of the spices to the meat, mix well.

Add the cooked rice to the meat, mix in.

Scoop out one scoop of the meat and tuck it in the green pepper.

Use a narrow knife to help push the meat inside the pepper.

Uncover the cooked tomatoes, add the green peppers with the meat facing down, cover & cook on low.

After 20 minutes flip the peppers, cover & cook another 20-25 minutes.
