Chicken Meatballs with Olives in Red sauce

INGREDIENTS

1.5 lb. ground chicken meat

1 zucchini, shredded

1 onion, shredded

1 potato, shredded

1 bunch of parsley, chopped

3 cloves of garlic, minced

1/4 cup olive oil

1 tsp. salt

1/2 tsp. black pepper

1 tsp. paprika

1/2 tsp. cumin

2 cans of pitted green olives

FOR THE RED SAUCE-

2 cans of tomatoes sauce.

1/4 cup olive oil

1 chopped onion

1 tsp. salt

1 tsp. paprika

2.5 cups water

fresh cilantro or parsley for garnish

TO MAKE

Add green olives to boiling water & cook for 10 minutes.

Repeat second time.

Add garlic, cook 2 minutes to release flavors.

Add tomato sauce to the pan

Add spices .

Add green olives

Use ice cream scoop to add ground meat.

Mix all meatballs ingredients and let sit while getting the sauce ready. Arrange meatballs gently & do not mix with sauce.

Tilt to mix only. do not mix with a spatula. Cook uncovered to thicken the red sauce, enjoy.
