How to make this epic Sweet Potato Jam Recipe

How to make sweet potato jam recipe This sweet potato treat is everything- it’s a jam, pie flavor, cake filling, roulade & cookies flavor.

It’s an old-world authentic recipe that my mom used to flavor so many of her dishes with.

INGREDIENTS

  • 1 lb. sweet potatoes 

  • 1 lb. sugar

  • 1 lemon

    TO MAKE

    Pell of sweet potato, slice or cube, add water, and cook for 20 minutes, discard water and let cool.

    Use a cheese grater to grate potatoes or use a food processor to shred potatoes.

    Add sugar and shredded potatoes to a pot, cook on very low heat, and cover.

    As the sugar starts melting, gently mix to blend.

    Make sure the heat is very low, otherwise the sugar will burn.

    As the potatoes cook they will release their juice and will blend gently with the sugar.

    Cook for about 3 hours, always with a covered pot. add the juice of 1 lemon at the last 30 minutes. taste and see if the jam needs more juice. If you like your jam a little zesty, add the juice of another half lemon.

    This jam is great for roast, as a cake filling, as a cookie filling, or just on a toast with a good cheese spread. I love it on a toast with yogurt cheese.
